Gluten Free Cherry Ripe Slice

This slice is great for those who don't eat gluten but it also delicious for anyone else to try. It has a great cherry hit and will be enjoyed by all. You can leave the cherries out or swap for other dried fruit if you choose but I think they make the slice.

Ingredients 

Base

• 1 cup gluten-free flour 

• 1 teaspoon baking powder ( make sure is gluten free)

• 1/2 cup sugar

• 1 cup desiccated coconut 

• 125g melted butter

• 1 Cup glazed cherries

• 2 tablespoons  Cocoa 

Icing 

• 1 cup icing sugar , make sure it is icing sugar and not icing mixture as icing mixture contains gluten.

• 2 Tablespoons  Cocoa 

• 1/4 cup boiling water

Method

1. Preheat oven to 180 degrees Celsius.

2. Mix all base ingredients into a food processor until well combined.

3. Line a 22 cm tray with baking paper.

4. Press the mixture into the slice tray evenly.

5. Bake for 15 - 20 minutes in preheated oven.

6. Remove from oven and allow to cool completely.

7. Mix icing ingredients together.

8. Pour icing over the slice and pop in the fridge, it will set firm.

9. Slice and try not to eat it all at once!

Please note the slice will feel a bit soft when you get it out of the oven but it will firm up. If you want a firmer slice leave for an extra 5 minutes, be careful not to overcook it or it will go dry.

Serves 12

Tip: You can add sultanas instead of cherries if you don't have them. Garnish with coconut and cherries if you like!
