I have been known to use this easy and quick Bruschetta recipe as a mid week meal. The fact that it is super tasty and filling means I get no complaints from the family. When I serve as a meal I will sometimes add feta cheese and some Chorizo as well, so good.
This recipe is like having a cafe meal in your own home, very easy to make and even easier to eat, give it a go next time you a to tired to cook or feel like something tasty and fresh!
Ingredients:
4 tomatoes diced
½ cup olive oil
2 tbsp chopped fresh parsley
2 tbsp chopped fresh basil
4 garlic cloves
8 slices of your favourite crusty bread (we use sourdough)
Instructions:
Combine the tomatoes, half the crushed garlic, herbs and ¼ cup of olive oil in a bowl. Season mixture with salt and pepper. Cover and stand for 25 mins.
Preheat sandwich maker until hot.
Combine remaining garlic with ¼ cup of olive oil in a small bowl.
Brush garlic oil over bread slices on both sides.
Place bread on sandwich maker and cook for 2 mins or until golden brown.
Scoop tomatoes mixture onto freshly toasted bread and garnish with fresh basil or parsley.
Serves: 4
Tip: Drizzle with balsamic vinegar or lemon for desired taste.
