The thing I love about this Healthy hidden veggie smoothie is that I can actually hide cauliflower in it without the kids knowing. < genius!
The trick is to make sure the cauliflower is blended to a really fine dust, I use a Thermomix or Nutri - Bullet, then I add the coconut milk and blend well, your little ones will never know that this super smoothie has a hidden veggie in it!
Ingredients
- 250 mills coconut milk
- 1/2 cup cauliflower
- 1 cup frozen strawberries
- 1 frozen banana
- 4 drops liquid stevia
- shredded coconut to garnish
Method
- Pop the cauliflower into a blender and blitz until a fine sand texture.
- Add coconut milk and blend for 1 minute.
- Add the rest of the ingredients and blend for a further minute, you want to make sure there is no grainy texture.
- Pour into glasses and enjoy!
