Make Pizza And Bread Rolls With Only 2 Ingredients!

It almost sounds to good to be true doesn't it? I mean who can make bread rolls or even pizza with only 2 ingredients. Let me tell you I was a little weary of making this recipe when I first heard about it, but I am so glad I did. I use this recipe all the time and has become my weekly go to for bread rolls and Pizza bases.

I am all for finding multiple uses of grocery items and I love that these recipes use Greek yogurt. I buy a big tub when I do the grocery shopping and I use it for breakfasts, baking  and dips it really is so versatile.

The mixture will seem a little sticky don't worry this is normal, once you pop on a floured surface it won't stick so much.

Cafe Grade Pizza Bases

Ingredients:

• 1 cup of natural low fat  Greek yogurt

• 3 cups of self raising flour

• Flour to dust and roll

Instructions:

1. Place the ingredients into a Thermomix or mix master and combine well, you can also do by hand but will take longer.

2. Once mixed though place on knead setting in Thermomix for 7 minutes, if you don’t have a Thermomix or electric kneading machine you will need to do it by hand for approx. 10 minutes.

3. Dust with flour as you go so it doesn’t stick, it will be sticky at first this is normal. If you are still finding it a bit sticky then add some more flour it will be fine.

4. Once you have finished kneading, preheat an oven to 200 degrees.

5. Set dough aside for 10- 15 mins in a bowl with a tea towel over the top so that it rises.

6. Place baking paper on the bench and pop dough on it, place another piece of baking paper over the top, this will stop the rolling pin from sticking. Roll until approx. 1 1/2 cms thick.

7. Take a large dinner plate and put on the top of the dough and cut around it to get circle shape pizza, this is optional you can make square or any shape you like.

8. Pop onto a lined pizza tray and prick the top with a fork every couple of cms this will stop it from over rising.

9. Pop in the oven for 6 mins, enough just to start cooking it. This is good if you want to freeze the bases as well, once cooled you can freeze them and use at later date.

10. Pop your favourite topping on the pizza and pop back in the oven for 15 – 20 mins at 200 degrees Celsius. Slice and enjoy.

Serves: 4- 6 Recipe makes approx. 2 large bases.


Yummy Bread Rolls

I make these bread rolls once a week they are a little denser then a normal bread role but really delicious and super filling. I find these last well if stored in the fridge for 2 - 3 days. I also love the fact that they don't have any nasty chemicals in them, you can also use gluten free flour with a teaspoon of baking powder and they will work fine as well.

Ingredients

• 1 cup natural  Greek Yogurt 

• 3 cups self raising flour  

• Flour for rolling

• Toppings of your choice we used 250 grams grated cheese and 250 grams diced bacon bits.

Method

1. Combine yogurt and 3 cups flour in the bowl of an electric stand mixer.  Mix until combined, scraping down the bowl as necessary until combined. 

2. Knead on high for 5 minutes.  If you don't have an electric kneading machine then knead for a good 10 minutes by hand.

3. Preheat oven to 200 degrees.

4. Line a tray with baking paper and set aside.

5. lightly flour the bench top and roll into approx 2 inch balls.

6. join balls together on the tray and lightly press down on them so that they are flatter.

7. Sprinkle ham and cheese over the top.

8. Pop in the oven for 12- 15 minutes.

9. Once cooked let cool and pull apart.

10. Slice and add your favourite fillings.

Makes 12

Tip:  I also add vegemite and butter to the middle of the rolls  sometimes before baking, and this makes a yummy vegemite scroll. You can also make delicious garlic bread yum!
