Bacon  Cheese & Veggie Sausage Rolls


These are super easy and out of all the different types and flavored sausage trolls I bake, these are the most loved.  How many sausage rolls you create is really dependent on how big or small you cut them. 

Ingredients

100g of tasty cheese (cut into narrow sticks about the size of a pencil)

500g of beef mince

200g bacon

1 cup of chicken stuffing mix

3 large eggs

1 (already finely diced and browned onion)

1 tablespoon of dried Italian herbs

1 teaspoon of garlic

2 tablespoon of tomato sauce

1 tablespoon of Worcestershire sauce

1 packet of short-crust or puff pastry (whichever you prefer)

Sesame seeds (optional)

2 tablespoons parsley optional.

Salt and Pepper to taste

Method

In a large mixing bowl add the beef mince, the cooked onion, garlic, tomato sauce, dried herbs, garlic, Worcestershire sauce, stuffing mix and 2 eggs.  Mix all of these ingredients well together.

Whisk the remaining egg in a little bowl.

On a dry flat surface throw some flour down and lay your pastry sheets out.

Place the mixture on the pastry, then push the cheese sticks into the mince mixture.  Place the bacon strip over the mince mixture. Close the pastry over the mince and brush with the whisked egg.  Scatter some sesame seeds or dried herbs ontop (if desired).

Bake in the oven for 30 mins at 200 degrees.

Apple Crumble Smoothie

We have been trailing smoothies daily now for the past month and this Apple Crumble Smoothie is one of my favourites.

Sweet, filling and with yummy greens that are good for you. A great breakfast on the go or afternoon snack for everyone!

Ingredients

  • 1 cup baby spinach
  • 2 apples
  • 1 frozen banana
  • 1/2 cup oats
  • 1 teaspoon cinnamon
  • 2 dates
  • 1 1/2 cup full cream milk

Method

  1. Add oats to a blender and blitz for 30 seconds.
  2. Add all other ingredients to the blender and continue to blend for a further 2 minutes until really smooth.
  3. Pour into 2 glasses and enjoy!

Serves: 2

Tip: Use whatever milk you like, this is also great with almond milk. It is also great with chilled coconut water.

Easy Preserved Lemons

My Gran has always preserved her own lemons and this is the recipe she has passed down to us.

With a full lemon tree in our backyard I make jars and jars of these and give them to friends. We use in sweet and savoury dishes and have even been known to eat straight out of the jar!

Ingredients:

  • 1 kg Lemons
  • 10 cloves
  • 1/2 cup sea salt
  • 800 mills lemon juice
  • 4 cinnamon sticks
  • 3 bay leaves

  1. Wash lemons and pat dry.
  2. Cut into quarters.
  3. Sprinkle salt on the base of the jar approx 3 tablespoons.
  4. rall lemon quarters in remaining salt.
  5. Pop lemons into jar and pack firmly.
  6. Add the cinnamon cloves and bay leaves to the jar.
  7. Pour in lemon juice it should cover the top of the lemons.
  8. pop on air tight lid and store in cool dark place for approx 5 weeks.
  9. Once opened store in fridge for up to 3 weeks.

Hidden Veggie Mac And Cheese!

Lets face it kids can sniff out the smallest veggie before it hits the kitchen table < super powers! This Hidden Veggie Mac And Cheese can make the fussiest of eaters consume veggies without even knowing it.

The best part is that it has 5 veggies in it and is kid approved, the whole family loves it when I make it and you can adapt it with what ever veggies you have in the fridge, just remember to blitz them well so no one sees ha!

Ingredients

1 Packet of macaroni -

2 cups mashed pumpkin -

1 cup mashed sweet potato -

1 carrot -

1/2 zucchini -

1 litre of milk -

60 grams of butter -

1 onion -

250 grams of cheddar cheese -

Pinch of salt and pepper 

Method

1. Preheat oven to 180 degrees

2. Add butter and onion to a large saucepan.

3. Cook on high until onions are transparent and cooked through.

4. Blitz all veggies in a food processor until smooth.

5. Add milk and macaroni and stir until it boils.

6. Add the pumpkin, sweet potato, zuchini and carrot and stir through.

7. Reduce heat and simmer for 15 minutes, until pasta is cooked through.

8. Add 200 grams of the cheese and stir through until it's melted

9. Pop the Mac and Cheese into a oven proof dish and sprinkle with remaining cheese.

10. Place in the oven for 8 minutes until the top forms a golden crust. (skip this step if you don't like a crunchy top)

11. Serve and enjoy!

Serves 4

Tip: Use Spaghetti and you have a vegetarian pasta dish!

Easy Lamb Koftas The Whole Family Will Love!

Lamb Koftas are quick to make and really delicious!

They can be used in wraps, sandwiches or simple eat with a side salad. Perfect for dipping into natural yogurt or dips.

Ingredients:

750 grams lamb mince 

1 onion - 4 cloves garlic

1/4 cup diced parsley 

1/4 cup diced mint 

1/4 cup coriander diced optional

2 teaspoons cumin 

1 teaspoon sumac -

1 red chilli optional lamb koftas post Instructions:

1. Place the chilli, onion, garlic, herbs and spices into a food processor and blitz until a fine paste.

2. Add the Lamb and combine well.

3. Add salt and pepper and mix through.

4. Separate mixture into 24 portions and shape into an oval shape.

5. Thread a thick skewer up the centre of them .

6. Spay Meat with olive oil spray

7. Heat a frying pan, or bbq cook top and cook for a good 5 minutes each side, turn until they are brown in colour.

8. Serve with your favourite side salad and dips.

9. Enjoy!

Serves: 4

Tip: Add whatever spices you like, I sometimes add honey for a sweeter version, leave chilli out if you don't like them with a bit of bite.

Try Our Weet - Bix Chicken Nuggets They are delicious!

I love cooking with Weet - Bix in fact they are used more for cooking then for breakfast in our house.

Weet - Bix are so versatile you can use them in sweet and savoury baking and they are great to use as crumbing ingredients as well. Try our Weet - Bix Chicken Nuggets, the texture is crisp, crunchy and delicious. The whole family will love them!

 Ingredients:

  • 1 kilo of chicken breast cut into nugget size pieces
  • 4 weet - bix
  • 1 cup of flour of your choice, we used plain flour
  • Good pinch of Salt and pepper
  • 1 teaspoon of vegetta stock powder
  • 2 eggs beaten
  • Butter or Olive Oil to cook.
  • Good pinch of celery salt

Method:

  1. Blitz weet - bix in a food processor to a fine crumb.
  2. Place flour, celery salt, vegetta, salt, pepper and weet - bix into a mixing bowl
  3. Add beaten eggs to a bowl
  4. Pop the chicken into the egg and coat well
  5. Once chicken is coated in egg, pop into weet - bix mix and coat well.
  6. Add coated pieces to a plate
  7. Add butter to a hot wok or frying pan
  8. Add chicken pieces and flip regally for 5 mins,
  9. After 5 mins turn heat down to medium and keep flipping the chicken pieces until they have a golden colour.
  10. Take one piece out and cut n half to make sure cooked through.
  11. Once cooked serve with your favourite dipping sauce.
  12. We have also made these with a little chilli powder and garlic salt yum, add your favourite spices and get creative!

Serves 4

Tip: Add 1/2 cup of parmesan cheese to crumb mixture for a cheesy crispy coating yum!

Idaho Idaho potatoes are very starchy, which means they are high in starch and low in moisture. This makes for a very fluffy potato that is great for boiling, baking and frying, but not so great for casseroles, gratins and potato salads, ad they don’t hold their shape very well. potato gratin

Pinkeye These are also known as Southern Golden potatoes, and have a waxy looking skin with a yellow inside. They have a nutty flavour and work well in salads, or when boiled, steamed or baked.

Pontiac Pontiac potatoes are versatile and work well in most dishes. They have a pink skin with white flesh, and are perfect for boiling, baking, roasting, microwaving and mashing. However, they aren’t as suitable for frying.

Purple Congo As the name suggests, Purple Congo potatoes have a purple skin and flesh, which is perfect for adding colour and interest to meals. Kids love the novelty of coloured potatoes. These are good for mashing, steaming, boiling and microwaving, and also in potato salads, however they don’t work as well for roasting. The only downside is that they can have a dry texture once they have been cooked.

Russet Burbank Russet Burbank potatoes are a floury potato that is perfect for frying, roasting, baking and making chips, and are great when teamed with butter and cream, such as when making mashed potatoes. These potatoes make fantastic crunchy chips. They are however not recommended for boiling or in salads, they won’t hold their shape well. roast potato Sebago Sebago potatoes are very popular in Australia and can be found in most supermarkets and fresh produce stores. Kifler These potatoes are a finger shaped, knobbly looking potato with a waxy skin and ple yellow inside. They have a buttery taste, and are great for boiling, steaming, in salads and roasting, but they don’t work well for frying or to make chips.

Royal Blue Royal Blue potatoes are a great all rounder and can be used for any type of cooking. They are an oval shaped potato with purple skin and a yellow inside. They shine best when used for mashing, roasting or as chips.

Desiree Desiree potatoes are an extremely popular variety that have a pink skin and pale yellow inside. These potatoes hold their shape very well making them perfect for boiling, baking, and mashing. They are however not so good for frying.

Do you ever have those days where it is impossible to get your kids to eat breakfast? They stare off into the abyss looking anywhere but at their food they are meant to be eating, while you run around frantically trying to organise everyone, secretly wishing you had time to sit down and eat breakfast yourself < please tell me I am not the only one haha

These times are where these refined sugar free banana and coconut muffins come in handy. They double as a quick breakfast, a lunch box snack and perfect for morning and afternoon tea. They are low in sugar and filling due to the chia seeds, give them a go you will be pleasantly surprised!

Ingredients:

  • 3 Ripe bananas
  • 1/4 cup Coconut oil
  • 1 tsp Vanilla extract
  • 4 Eggs
  • 1/2 Self raising flour
  • 1/2 Coconut flour
  • 1/4 Chia Seed
  • 6 Dates
  • 1/2 Ground cinnamon
  • 1/4 Ground nutmeg

Method:

  1. Preheat oven to 160 degrees fan forced 180degrees not fan forced.
  2. Pop cupcake cases into a muffin tray ready.
  3. Pop all ingredients except chia seeds and flour into a Thermomix, blender or food processor and blend well.
  4. Pour mixture into a bowl and add flours and chia seeds. Mix well.
  5. Let stand for 10 minutes as the mixture will thicken slightly and then scoop into muffin cases approx 1 heaped tablespoon per case.
  6. Pop in oven for 25 - 30 minutes.
  7. Eat warm, or freeze for up to 5 weeks for lunch box and breakfasts

The Perfect Coffee Slice For Any Time Of The Day!

This slice is not just for coffee lovers, it is rich sweet and with 3 delicious layers it makes this slice a winner!

This coffee slice is perfect to take along to a morning tea or as an afternoon treat. Be warned though it is hard to stop at one piece, I often find myself heading to the fridge late at night when I know this is in the house.

Ingredients:

Base 125 grams Butter

1/4 Cup Sugar 1 Cup Plain flour

1/4 cup Self raising flour

Filling 400 grams Condensed Milk

30 grams Butter

2 tablespoons Golden syrup

3 teaspoons Instant coffee

1/3 cup Walnuts chopped

Topping 1 cup Plain flour

2 teaspoons

Cinnamon 1/3 brown Sugar

125 grams Butter coffe - slice - post Instructions

Base Beat butter and sugar until creamy.

Add flour and mix well Spread evenly over 30cm x 25 cm tray lined with baking paper.

Bake in 180 degree oven for 10 minutes.

Prepare filling

Filling

Combine all ingredients except walnuts in a saucepan on medium heat until mixture begins to bubble, stir briskly for 3 minutes until it thickens up.

Add walnuts and stir. Spread over base once it has cooked for 10 minutes.

Prepare topping.

Topping

Mix all topping ingredients until well combined.

Grate topping over the top of the slice, in a crumble texture.

 Bake for another 10 minutes.

Once cooked let cool and slice yum!

If you love the good old chocolate crackles, you are going to love this slice. This slice always gets eaten super quick in our house, great as a treat or party food.

Ingredients

  • Rice bubbles 4 cups
  • Coconut 1 cup
  • Cocoa 1/2 cup
  • Icing Sugar 1 1/2 cups
  • Sultanas 1 cup
  • Copha 250 grams

  1. heat copha in a saucepan over low heat until melted.
  2. Add all other ingredients to a bowl and mix through.
  3. Add copha to bowl and combine well.
  4. Place in a 28 cm x 18cm tray lined with baking paper.
  5. Press mixture into tray evenly.
  6. Pop in the fridge until firm.
  7. Slice and enjoy!

Serves: 16

Tip: If you dont have rice bubbles you can use Coco Pops instead.

Home Made LCM Bars!

Ill be honest We don't buy our kids LCM bars or muesli bars for their school lunch box, but a while back my daughter asked me if she could have one after seeing a friend with them at school. I wasn't going to head out and buy a box so we decided to make our own as a one off treat.

Surprisingly hubby and I ate them more then the kids haha. They are so easy to make, if you do buy them then give this recipe a go!

Ingredients:

  • 1 Packet of marshmallows we used Allens
  • 80 grams of butter
  • 5 Cups of Rice bubbles
  • 2 tablespoons of 100s and 1000s

Method:

  1. Place marshmallows and butter into microwave bowl and cook on high for 50 seconds
  2. Add the rice bubbles to the marshmallow mix
  3. Mix well and pour mixture into a tray lined with baking paper
  4. Spread the mixture out evenly and sprinkle 100s and 1000s on top
  5. Pop in fridge and let set for 3 hours
  6. Slice and enjoy!

Apple And Mango Creamy Crumble Slice!

All I can say is this slice is over the top delicious, this is one of them slices that you break your diet for haha.

This slice is a mix of sweet fruit with crunchy crumble with an almost custard like filling, great on its own or as a side with vanilla bean ice cream. < salivating here! It is a pretty straight forward slice and any fruit can be used for the filling, I have used berries before and was delicious!

Ingredients

  • 250 grams Tin apples
  • 1 cup mango pieces diced small
  • 2 cups self raising flour
  • 2 cups oats
  • 1 1/2 cups packed caster sugar
  • 1 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 1/4 cups butter, melted
  • 395 grams condensed milk
  • 1 cup sour cream

  1. Line a 25 cm tray with baking paper.
  2. Preheat oven to 170.
  3. Combine flour, sugar, cinnamon, oats, and baking soda in a bowl and mix well.
  4. Add melted butter and stir well.
  5. Pop 3/4 of the mixture onto the tray and press firm so the base is even to the edges, pop in oven for 10 minutes.
  6. In the mean time place the sour cream and condensed milk into a bowl and mix well.
  7. In another bowl mix the apples and mango together and set aside.
  8. Pour the condensed milk over the base once cooked so it spreads evenly.
  9. Add the mango and apple mixture to the top of the condensed milk and spread evenly.
  10. Crumble the remaining base mixture ofer the top of the mango and apple until it is mainly covered.
  11. Pop into he over for a further 20-25 minutes until it starts to golden in colour and the cream centre starts to firm.
  12. Let cool in tray before slicing so it firms up more.
  13. Pop in the fridge.
  14. Slice and enjoy!

These Apricot Oat Balls are a great no bake treat that everyone will enjoy. Super quick to make and easy to eat haha!

Easy Apricot Oat balls, Great For Lunch Box Snacks!

Ingredients:

  • 150 grams Dried apricots
  • 75 grams rice malt syrup or honey
  • 200 grams rolled oats
  • 150 grams desiccated coconut
  • 25 grams soft butter

  1. Place apricots, coconut and oats into a food processor and blitz well.
  2. Pop mixture into a bowl with the honey and butter.
  3. Roll into approx 1 inch balls
  4. Pop in the fridge to set for approx 1 hour
  5. Enjoy!

Tip: Store in the freezer for up to 5 weeks and keep for lunch box treats!

Serves: 20

Apple And Pork Balls

These Apple and Pork balls are a great lunch box snack, perfect for picnics and great as a main meal or starter. They are sweet and delicious with a perfect balance of flavour. Kids love these and so does hubby!

Ingredients

  • 500 grams Pork mince
  • 1/2 cup sweet chilli sauce
  • 1Egg
  • 1 cup Breadcrumbs
  • 1 Zucchini grated finely
  • 1 Apple grated we used a granny smith
  • 3 tablespoons Olive oil

  1. Place all ingredients except oil into a mixing bowl and combine well.
  2. Roll into approx 1 1/2 inch balls then flatten out into patties.
  3. Add oil to pan and heat on high, pop the patties in and cook for 3- 5 minutes on each side until they are cooked.
  4. Once cooked pop on a plate lined with paper towel to drain any excess oil
  5. Serve with your favourite salad or add straight to a burger, delish!
  6. You can also use BBQ sauce if you don’t like chilli.
  7. These are great made into balls for party food.

Makes 12

Tip: You can change the sweet chilli sauce for rice malt syrup or honey yum!

This is a great recipe for hiding veggies from the kids < insert wicked mum laugh hahaha

These Chicken Cheese and Veggie Balls are delicious and moist and are great as a meal with a side salad or veggies or pop them in the lunch box on their own or in a sandwich or wrap, so versatile!

Ingredients

500 grams Chicken mince

150 grams Tasty cheese grated

1 Egg 1 cup Breadcrumbs

1Carrot grated finely

1/4 cup corn kernels, frozen is fine but defrost before adding.

3 tablespoons Olive oil chicken - cheese - and - veggie - balls - post

Method

Place all ingredients except oil into a mixing bowl and combine well.

Roll into approx 1 1/2 inch balls then flatten out into patties.

Add oil to pan and heat on high, pop the patties in and cook for 3- 5 minutes on each side until they are cooked.

Once cooked pop on a plate lined with paper towel to drain any excess oil Serve with your favourite side or pop into a burger with some salad yum!

These may stick a little due to the cheese, they come off fine with a spatula though.

Makes 12

Tip: Add whatever left over vegies you have in the fridge.

5 Ingredients Nutella And Oat Cookies!

This recipe is my go to no fail cookie recipe, I can have them baked on the table ready to eat in 20 minutes including cooking time.

I often whip a batch of these up when visitors drop in, warm Nutella cookies with coffee yum!

Ingredients

  • Butter 90 grams
  • Nutella 200 grams
  • Cocoa 1 tablespoon, we used Cadbury.
  • Oats 180 grams
  • hazelnuts 70 grams

Method

  1. Add butter and Nutella to a bowl and microwave on high for 45 seconds, stir and add to mixing bowl.
  2. Add Oats, cocoa and hazelnuts to a food processor and blitz well.
  3. Add oat mix to the bowl and mix through.
  4. Shape mixture into approx 16 balls and pop on tray.
  5. Lightly press them to look like biscuits.
  6. Pop in oven for 10 - 12 minutes.
  7. Eat warm or let cool, they will firm up as they cool.

Tip: For extra chocolate gooiness add 1/2 cup of chocolate chips to the mixture before cooking!

This is a great alternative to ice cream, kids don't know any different and you can have a bowl without feeling like you are breaking the diet!

Ingredients

  • 1 Frozen banana
  • 2 Cups Frozen cherries
  • 30 Mills of Milk of your choice
  • Coconut to garnish

  Method

  1. Place all ingredients into a food processor and blitz until smooth.
  2. Add more milk if not smooth enough.
  3. Serve in 2 bowls and sprinkle with coconut and enjoy!
