Refined Sugar Free Banana And Coconut Muffins


Do you ever have those days where it is impossible to get your kids to eat breakfast? They stare off into the abyss looking anywhere but at their food they are meant to be eating, while you run around frantically trying to organise everyone, secretly wishing you had time to sit down and eat breakfast yourself < please tell me I am not the only one haha

These times are where these refined sugar free banana and coconut muffins come in handy. They double as a quick breakfast, a lunch box snack and perfect for morning and afternoon tea. They are low in sugar and filling due to the chia seeds, give them a go you will be pleasantly surprised!

Ingredients:

  • 3 Ripe bananas
  • 1/4 cup Coconut oil
  • 1 tsp Vanilla extract
  • 4 Eggs
  • 1/2 Self raising flour
  • 1/2 Coconut flour
  • 1/4 Chia Seed
  • 6 Dates
  • 1/2 Ground cinnamon
  • 1/4 Ground nutmeg

Method:

  1. Preheat oven to 160 degrees fan forced 180degrees not fan forced.
  2. Pop cupcake cases into a muffin tray ready.
  3. Pop all ingredients except chia seeds and flour into a Thermomix, blender or food processor and blend well.
  4. Pour mixture into a bowl and add flours and chia seeds. Mix well.
  5. Let stand for 10 minutes as the mixture will thicken slightly and then scoop into muffin cases approx 1 heaped tablespoon per case.
  6. Pop in oven for 25 - 30 minutes.
  7. Eat warm, or freeze for up to 5 weeks for lunch box and breakfasts

The Perfect Coffee Slice For Any Time Of The Day!

This slice is not just for coffee lovers, it is rich sweet and with 3 delicious layers it makes this slice a winner!

This coffee slice is perfect to take along to a morning tea or as an afternoon treat. Be warned though it is hard to stop at one piece, I often find myself heading to the fridge late at night when I know this is in the house.

Ingredients:

Base 125 grams Butter

1/4 Cup Sugar 1 Cup Plain flour

1/4 cup Self raising flour

Filling 400 grams Condensed Milk

30 grams Butter

2 tablespoons Golden syrup

3 teaspoons Instant coffee

1/3 cup Walnuts chopped

Topping 1 cup Plain flour

2 teaspoons

Cinnamon 1/3 brown Sugar

125 grams Butter coffe - slice - post Instructions

Base Beat butter and sugar until creamy.

Add flour and mix well Spread evenly over 30cm x 25 cm tray lined with baking paper.

Bake in 180 degree oven for 10 minutes.

Prepare filling

Filling

Combine all ingredients except walnuts in a saucepan on medium heat until mixture begins to bubble, stir briskly for 3 minutes until it thickens up.

Add walnuts and stir. Spread over base once it has cooked for 10 minutes.

Prepare topping.

Topping

Mix all topping ingredients until well combined.

Grate topping over the top of the slice, in a crumble texture.

 Bake for another 10 minutes.

Once cooked let cool and slice yum!

Serves: 16

If you love the good old chocolate crackles, you are going to love this slice. This slice always gets eaten super quick in our house, great as a treat or party food.

Ingredients

  • Rice bubbles 4 cups
  • Coconut 1 cup
  • Cocoa 1/2 cup
  • Icing Sugar 1 1/2 cups
  • Sultanas 1 cup
  • Copha 250 grams

  1. heat copha in a saucepan over low heat until melted.
  2. Add all other ingredients to a bowl and mix through.
  3. Add copha to bowl and combine well.
  4. Place in a 28 cm x 18cm tray lined with baking paper.
  5. Press mixture into tray evenly.
  6. Pop in the fridge until firm.
  7. Slice and enjoy!

Serves: 16

Tip: If you dont have rice bubbles you can use Coco Pops instead.

Home Made LCM Bars!

Ill be honest We don't buy our kids LCM bars or muesli bars for their school lunch box, but a while back my daughter asked me if she could have one after seeing a friend with them at school. I wasn't going to head out and buy a box so we decided to make our own as a one off treat.

Surprisingly hubby and I ate them more then the kids haha. They are so easy to make, if you do buy them then give this recipe a go!

Ingredients:

  • 1 Packet of marshmallows we used Allens
  • 80 grams of butter
  • 5 Cups of Rice bubbles
  • 2 tablespoons of 100s and 1000s

Method:

  1. Place marshmallows and butter into microwave bowl and cook on high for 50 seconds
  2. Add the rice bubbles to the marshmallow mix
  3. Mix well and pour mixture into a tray lined with baking paper
  4. Spread the mixture out evenly and sprinkle 100s and 1000s on top
  5. Pop in fridge and let set for 3 hours
  6. Slice and enjoy!

Apple And Mango Creamy Crumble Slice!

All I can say is this slice is over the top delicious, this is one of them slices that you break your diet for haha.

This slice is a mix of sweet fruit with crunchy crumble with an almost custard like filling, great on its own or as a side with vanilla bean ice cream. < salivating here! It is a pretty straight forward slice and any fruit can be used for the filling, I have used berries before and was delicious!

Ingredients

  • 250 grams Tin apples
  • 1 cup mango pieces diced small
  • 2 cups self raising flour
  • 2 cups oats
  • 1 1/2 cups packed caster sugar
  • 1 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 1/4 cups butter, melted
  • 395 grams condensed milk
  • 1 cup sour cream

  1. Line a 25 cm tray with baking paper.
  2. Preheat oven to 170.
  3. Combine flour, sugar, cinnamon, oats, and baking soda in a bowl and mix well.
  4. Add melted butter and stir well.
  5. Pop 3/4 of the mixture onto the tray and press firm so the base is even to the edges, pop in oven for 10 minutes.
  6. In the mean time place the sour cream and condensed milk into a bowl and mix well.
  7. In another bowl mix the apples and mango together and set aside.
  8. Pour the condensed milk over the base once cooked so it spreads evenly.
  9. Add the mango and apple mixture to the top of the condensed milk and spread evenly.
  10. Crumble the remaining base mixture ofer the top of the mango and apple until it is mainly covered.
  11. Pop into he over for a further 20-25 minutes until it starts to golden in colour and the cream centre starts to firm.
  12. Let cool in tray before slicing so it firms up more.
  13. Pop in the fridge.
  14. Slice and enjoy!

These Apple and Pork balls are a great lunch box snack, perfect for picnics and great as a main meal or starter. They are sweet and delicious with a perfect balance of flavour. Kids love these and so does hubby!

Ingredients

  • 500 grams Pork mince
  • 1/2 cup sweet chilli sauce
  • 1Egg
  • 1 cup Breadcrumbs
  • 1 Zucchini grated finely
  • 1 Apple grated we used a granny smith
  • 3 tablespoons Olive oil

  1. Place all ingredients except oil into a mixing bowl and combine well.
  2. Roll into approx 1 1/2 inch balls then flatten out into patties.
  3. Add oil to pan and heat on high, pop the patties in and cook for 3- 5 minutes on each side until they are cooked.
  4. Once cooked pop on a plate lined with paper towel to drain any excess oil
  5. Serve with your favourite salad or add straight to a burger, delish!
  6. You can also use BBQ sauce if you don’t like chilli.
  7. These are great made into balls for party food.

Makes 12

Tip: You can change the sweet chilli sauce for rice malt syrup or honey yum!

Delicious Chicken Cheese And Veggie Balls

This is a great recipe for hiding veggies from the kids < insert wicked mum laugh hahaha

These Chicken Cheese and Veggie Balls are delicious and moist and are great as a meal with a side salad or veggies or pop them in the lunch box on their own or in a sandwich or wrap, so versatile!

Ingredients

500 grams Chicken mince

150 grams Tasty cheese grated

1 Egg 1 cup Breadcrumbs

1Carrot grated finely

1/4 cup corn kernels, frozen is fine but defrost before adding.

3 tablespoons Olive oil chicken - cheese - and - veggie - balls - post

Method

Place all ingredients except oil into a mixing bowl and combine well.

Roll into approx 1 1/2 inch balls then flatten out into patties.

Add oil to pan and heat on high, pop the patties in and cook for 3- 5 minutes on each side until they are cooked.

Once cooked pop on a plate lined with paper towel to drain any excess oil Serve with your favourite side or pop into a burger with some salad yum!

These may stick a little due to the cheese, they come off fine with a spatula though.

Makes 12

Tip: Add whatever left over vegies you have in the fridge.

I have been through a few play mats with my little ones and Bubba Mat from SoftMats are the best by far.

I remember when my daughter was little I purchased a bag of these connecting alphabet pieces that turned into a mat, all you had to do was spend 2 hours putting them together to make the mat, to only then come out half an hour later and find that your little one had pulled all the pieces apart ha! We use our BubbaMat for everything, we have taken it camping, to the park for a picnic, and to the beach. simply wipe clean when finished and then straight into the car. At least some stage throughout the day I can guarantee my children have sat on the Bubba mat.

5 Ingredients Nutella And Oat Cookies!

This recipe is my go to no fail cookie recipe, I can have them baked on the table ready to eat in 20 minutes including cooking time.

I often whip a batch of these up when visitors drop in, warm Nutella cookies with coffee yum!

Ingredients

  • Butter 90 grams
  • Nutella 200 grams
  • Cocoa 1 tablespoon, we used Cadbury.
  • Oats 180 grams
  • hazelnuts 70 grams

Method

  1. Add butter and Nutella to a bowl and microwave on high for 45 seconds, stir and add to mixing bowl.
  2. Add Oats, cocoa and hazelnuts to a food processor and blitz well.
  3. Add oat mix to the bowl and mix through.
  4. Shape mixture into approx 16 balls and pop on tray.
  5. Lightly press them to look like biscuits.
  6. Pop in oven for 10 - 12 minutes.
  7. Eat warm or let cool, they will firm up as they cool.

Tip: For extra chocolate gooiness add 1/2 cup of chocolate chips to the mixture before cooking!

This is a great alternative to ice cream, kids don't know any different and you can have a bowl without feeling like you are breaking the diet!

Ingredients

  • 1 Frozen banana
  • 2 Cups Frozen cherries
  • 30 Mills of Milk of your choice
  • Coconut to garnish

  Method

  1. Place all ingredients into a food processor and blitz until smooth.
  2. Add more milk if not smooth enough.
  3. Serve in 2 bowls and sprinkle with coconut and enjoy!

White Caramel Cake!

The texture of this caramel cake is amazing, so moist and not to mention the hit of caramel that you taste with each bite, this is definitely a winner in our house!

Ingredients:

  • Eggs 2
  • Butter 125 grams
  • White Sugar 1 cup
  • Self raising flour 1/2 Cup
  • Plain flour 1 Cup
  • Ground Cinnamon 1/2 teaspoon
  • Nutmeg 1/4 teaspoon
  • Golden syrup 1 tablespoon
  • Tin of caramel or your favourite caramel source for icing

Method:

  1. Preheat oven to 180 degrees
  2. Line a 20cem round tin with baking paper
  3. Beat butter, sugar vanilla essence until light and fluffy.
  4. Slowly add in eggs and keep beating.
  5. Add in syrup and keep mixing.
  6. Add in flours, cinnamon and nutmeg
  7. Add milk and mix well.
  8. Transfer mixture to baking time and spread out evenly.
  9. Pop in oven and bake for 45-50 minutes.
  10. Once cooked, let cool slightly then turn out to cool on a wire rack.
  11. Make sure cake is completely cooled before icing.

Easy & Quick Bruschetta that everyone will love!

I have been known to use this easy and quick Bruschetta recipe as a mid week meal. The fact that it is super tasty and filling means I get no complaints from the family. When I serve as a meal I will sometimes add feta cheese and some Chorizo as well, so good.

This recipe is like having a cafe meal in your own home, very easy to make and even easier to eat, give it a go next time you a to tired to cook or feel like something tasty and fresh!

Ingredients:

4 tomatoes diced

½ cup olive oil

2 tbsp chopped fresh parsley

2 tbsp chopped fresh basil

4 garlic cloves

8 slices of your favourite crusty bread (we use sourdough)

easy - quick - brushetta - post Instructions:

Combine the tomatoes, half the crushed garlic, herbs and ¼ cup of olive oil in a bowl. Season mixture with salt and pepper. Cover and stand for 25 mins.

Preheat sandwich maker until hot.

Combine remaining garlic with ¼ cup of olive oil in a small bowl.

Brush garlic oil over bread slices on both sides.

Place bread on sandwich maker and cook for 2 mins or until golden brown.

Scoop tomatoes mixture onto freshly toasted bread and garnish with fresh basil or parsley.

Serves: 4

Tip: Drizzle with balsamic vinegar or lemon for desired taste.

If you love frappes you are going to love this one!

I had a secret addiction to the McDonald's frappes to the point I was almost buying one every time I left the house, I knew I had to come up with something that was not only better for me but also didn't cost much as they were starting to add up. This is my spin on a healthy frappe, delicious!

Ingredients

  • 5 cups of ice
  • 1 tablespoon of nature’s way cocoa powder
  • 2 tablespoons of desiccated coconut
  • 1/2 cup of coconut milk
  • 1 teaspoon of rice malt syrup or 4 drops of liquid stevia.

 Method

  1. Pop all ingredients into a blender and blitz on high for 2 minutes until smooth.
  2. Pour into glasses and enjoy!

To be honest when I had my children I didn't even consider cloth nappies, the thought of using pins to secure a nappy sort of frightened me as a first time mum. I was one of those mums who was scared at first to hold my baby in fear of dropping them so I definitly didnt want t go anywhere near them with a pin. I talked myself into it being ok to use disposable nappies as I was also a busy working mum and would need the convenience of disposable nappies, and the time I saved washing would give me more time with my little one. Up until this point I only thought there were 2 options with nappies, disposable and cloth with pins.

 Then I  came across a business called Hippybottomus that designed cloth nappies that weren't only easy to use < button clips not pins, but they are also great for the environment.

 We tried the nappies and loved them instantly. My little one was a lot more comfortable in them then the  disposables. I had noticed that from time to time my baby would get a little red around the sides of hips where the sticky tabs where on the disposable nappy but using Hippybottomus nappies stopped this.

I thought that using cloth nappies would be a lot more work, but honestly it isn't and the money you save on buying disposables is so worth it. We were spending at least $30 a week on nappies. Now the money we save on disposable nappies we can use on other things for our little one.

Some of the awesome features of Hippybottomus are:

Natural fabric – against the skin is a layer of white bamboo fleece, which is anti-bacterial (& mildew resistant), has great ventilation, helps reduce odours, and is really soft. It is also anti-pilling and anti-fuzzing, so it washes really well. This fabric is far superior to the synthetic fabrics generally used in stay-dry nappies. It is also known to generate anions, which are very beneficial to bub’s health (they activate the bodies cells, purify the blood, help tiredness, calm the nervous system & improve allergies)

Stays dry against the skin – Bamboo micro-polar fleece has the ability to draw moisture away from the skin, keeping your baby dry and helping prevent nappy rash. All moisture is drawn into the insert.

Pocket design – a removable insert is placed inside the shell which allows you to separate the two parts for thorough washing and to speed up drying. It also allows you to add an extra insert or two of a nighttime to increase absorbency (meaning no midnight nappy changes).

Highly absorbent – each nappy comes with one insert which is made up of 2 layers of bamboo fleece and 3 layers of microfibre, which are both highly absorbent fabrics.

Waterproof – the combination of the layer of PUL (polyurethane laminate) and the polyester outer makes this nappy as waterproof as they come, so no cover is required.  From our previous nappies we have concluded that this is the best outer fabric in terms of containing moisture and preventing wicking.

Fast drying – the fabrics that make up the nappy allow it to dry extremely fast (1-2 hours with wind and sun and within a day if not).

One size fits most – each nappy can be adjusted to fit from birth (3kg) through to toilet training (17 kg) so there is no need to buy a whole new set of nappies as your baby grows. There are also two rows of snaps for a snug fit around the thighs and the waist as your  baby grows. The snaps are also nice and sturdy so won’t catch in the wash or wear over time like velcro can.

Easy – no folding or pins and no soaking is required (see how to use for more info) which make our modern cloth nappies just as easy to pop on as a disposable and really simple to wash (especially if you use a flushable bamboo nappy liner to collect the solids).
