Chicken Veggie Patties

 You can prepare these ahead of time. I love doing these in the morning and then leaving them in the fridge ready to cook.

 The Kids love them and you can sneak in any veggies you want!



500 grams of Chicken mince

60 grams of Cheese grated (Tasty, Fetta or Haloumi – or can be left out)

2 Tablespoons of freshly chopped parsley

½ Cups of wholemeal breadcrumbs

1 Large Shallot, chopped finely

1 Clove of Garlic, crushed

1 egg

2 teaspoons of paprika, I use sweet as they kids don’t like the hot one

1 Carrot, finely grated

1 Zucchini, finely grated

Olive Oil for frying

Alternative veggies: corn, broccoli, green beans, sweet potato



Grate, chop, crush and sprinkle all ingredients together and mix well. Use your hands makes it easier and quicker.

Form into balls, I usually use a tablespoon to scoop out and roll in to a ball and slightly flatten.

Fry in a pan of hot oil until golden brown and turn.

Place on paper towel to drain excess oil.

Apple Pie Oat Muffins

Apple Pie Oat Muffins

 These Muffins are great for school lunch box treats, perfect eaten warm or cold, add custard with them to turn into a delicious dessert or freeze for later!



2 cups Rolled Oats

1 teaspoon baking powder

2 teaspoons cinnamon

¼ teaspoon salt

1 ½ cup applesauce

½ cup of cooked and cooled pureed sweet potato

1 medium apple, grated (about 3/4 cup)

1 large egg white

1/4 cup rice malt syrup (or honey)

2 teaspoons pure vanilla bean paste

1 cup milk of choice

1/3 cup dried cranberries or sultanas

You could add in extras such as walnuts nuts or pecan nuts.



Preheat oven to 170°C. Spray a 12-cup muffin pan with non-stick cooking spray.

Stir together oats, baking powder, seasonings and salt in a large mixing bowl.

Add applesauce, sweet potato, grated apple, egg white, rice malt syrup, vanilla bean paste, milk and cranberries, plus any extras. Mix well.

Allow the mixture to set and thicken for about 3-5 minutes before spooning into your muffin pan.

Because these muffins don’t rise, fill muffin cups almost completely full with batter.

Bake for 30 minutes or until the centre of each muffin is set. Allow to cool for 10 minutes before serving.

If you don’t allow these to cool before taking them out of the muffin pan, they will fall apart. I used a knife around the sides to make removal easier. After cooling, they will set well.

These muffins can be stored in the fridge for 1 week or can be frozen for up to 3 months.

Deliciously Decedent Chocolate Cake

My Hubby loves anything chocolate.  I have been experimenting in the kitchen with different ingredients of late, you know to change things up and came up with this Deliciously Decedent Chocolate Cake.  It’s dense, decedent and absolutely divine, but most of all a winner! 



½ cup Coconut Flour

2 ½ teaspoons of Baking Powder

½ cup Olive Oil

½ Cup Coconut Milk

½ cup Cacoa Powder

Pinch of sea salt

½ cup of Maple Syrup

1 teaspoon of Vanilla Bean Paste

½ teaspoon of Ground Cinnamon



Preheat the oven to 160C

Line a 20 cm (9 inch) baking tin lined with baking paper

Combine the cocoa, coconut flour, baking powder, cinnamon and sea salt into a mixing bowl.

Add in eggs, honey, vanilla, coconut milk and olive oil.

Mix well until smooth and combine

Pour into cake tin and bake for 45mins or until cooked through. Test it after 35mins to make sure as oven temperatures may vary.

Remove from oven to cool on a wire rack.

Serve with yoghurt or your favourite chocolate icing.

White Chocolate, Tim Tam & Cheesecake Balls!

 Ok let me break this down for you, white chocolate, Tim Tams and Cream Cheese all in the one recipe < naughty we know!


2 packets White cholate Tim Tams

250 grams cream cheese

1 tablespoon icing sugar

1 Cup coconut

100 gram  White chocolate



Place the white chocolate into a microwave bowl and heat until melted approx 40 seconds

Add the Tim Tams and icing sugar to a food processor and blend well.

Add the cream cheese and combine.

Add the melted chocolate and combine well.

Add the coconut and keep mixing.

Roll mixture into approx 1 1/2 inch balls and coat in coconut.

Pop in the fridge to set for a few hours then enjoy!

Makes approx 55 balls

Easy Mince Tacos!

 How good are Tacos, no seriously they should be a food group on their own right? Whether you love soft or hard Tacos this mince will make your mouth water!



500 grams of mince, we used beef

1 onion finely diced

250 grams tin tomato.

1/2 tsp cayenne pepper

1 tsp garlic powder

1 tsp onion powder

1 1/2 tsp Paprika

1 tsp ground cumin

1 tsp chilli powder

1 tsp caster sugar

Good pinch of salt and pepper



Add all spices to a frying pan and heat until you smell a strong aroma.

Add the onion and cook until transparent

 Add the beef mince and cook until brown.

 Add the Tin tomato and sugar and let simmer for 10 - 15 minutes until reduced.

 Serve with your favourite salads and taco shells yum!

2 Cheese Spaghetti Kids Will Love!

I make this pasta at least once a month, I know it is the one meal that my kids will eat without having to bribe them ha!

 It is very simple to make it only has 6 ingredients, perfect for those days when you can't be bothered cooking!


1 Packet or pasta of your choice, we used spaghetti, cooker per packet instructions.

400 gram Tim of crushed Tomato's

400 gram tin of tomato soup

250 gram blog of Kraft Cheese cut into small cubes.

2 tablespoons finely grated parmesan (optional)

1 teaspoon or Stevia (or sugar of you choice)

Salt and pepper to taste.



Add the tin tomato and tomato soup to a large saucepan and bring to the boil.

Make sure you stir it so it doesn't stick t the bottom on the pan.

Turn the heat down to a simmer and add half of the kraft cheese and the Stevia and stir well.

Let simmer until most of the cheese has melted.

Add in the rest of the cheese and cook for  further 10 - 15 minutes until the cheese starts to melt, you want there to me some  bigger bits of melted cheese left in the sauce.

Add in the cooked spaghetti and stir through until all the pasta is well coated.

Serve in bowls and sprinkle with the parmesan cheese.


This also freezes really well.

If you don't want to add sugar you will need to simmer the tomato's longer before adding the cheese to get rid of some of the tartness. Make sure you stir as it can stick to the bottom of the pan.

Yummy Chocolate And Zucchini Slice!

 Chocolate and Zucchini slice, it may not sound appealing but let me tell you it is delicious, great for school lunch box treats!



 125 grams softened butter

 1 cup applesauce

 3/4 cup rice malt syrup ( you can sub for sugar of your choice)

 2 1/2 cups self raising flour

 3 cups finely grated zucchini

 1 teaspoon cinnamon

 1/2 teaspoon all spice

 1/2 teaspoon of salt

 1/4 cup coco powder

 1 teaspoon vanilla bean paste

 1/2 cup plain Greek yogurt

 3 eggs



 Preheat oven to 170 degrees

 Line a 25cem cake tin with baking paper

 Beat the butter, rice malt syrup and applesauce together. 

Add in one egg at a time and keep beating.

Add the flour and combine well.

Add all other ingredients and mix well.

The mixture should be wet enough to pour into the cake tin, if ts to wet add a little more flour, if its to dry add a little milk.

Bake for 30 - 45 minutes until it starts to firm up.

Allow to cool and slice.

You can add drizzled chocolate over the top if you like.

Tip: we also add macadamia nuts, peanuts and chocolate chips to make different variations.

Homemade Sweet Potato Chips!

These sweet potato chips are a healthier version of standard packet crisps. They are really delicious and my kids don't notice a difference. You can try different flavours by adding chicken salt or your favourite spices right after they have come out of the oven!



2 Sweet potatoes peeled

Spray Oil

Sea salt

Spices of your choice



Preheat the oven to 220 degrees

Slice the sweet potato  very thin, we used a hand held slicer to make it easier.

Place pieces in a bowl of cold water for a couple of minutes.

Remove and dry them well.

Place chips on baking paper.

Add spray oil and sea salt

Cook for approx 10 minutes until they go golden in colour.

Take out of oven and sprinkle with more salt while hot.

Place on a tray lined with paper towel until they cool and firm up.

Easy Chicken And Sweet Potato Pie!

Who doesn’t love a pie? I made this by accident one day when in the mood for some pie (pretty much I wake up in this mood most mornings) I was scrounging around the pantry and kind of threw it together and it was AMAZING. Try it, and then you will make it again and again and again I promise! This also freezes really well, so double the ingredients and make two.


  • 500g of chicken thighs (diced)
  • 200g bacon (diced)
  • 1 medium sweet potato peeled and diced
  • 1 sliced onion,
  • 2-3 tablespoons of chicken gravox.
  • 1/2 teaspoon of sage
  • 1 can if cream corn


  1. Brown onion and bacon
  2. Add chicken and cook until brown
  3. Add can of creamed corn
  4. Add diced sweet potato
  5. Add sage tablespoons of gravox
  6. Stir until combined
  7. Cook on low heat for 1 hour with the lid on
  8. Once mixture has cooled
  9. Spoon mixture into a pie dish and cover with one sheet of puff pastry
  10. Brush with some beaten egg and cook on 180 for 25 minutes.

Makes 2 pies

How To Tell When Your Spices Have Gone Stale!

You probably have a section in your kitchen pantry dedicated to dried herbs and spices, but did you know that those spices can go stale?

Spices are something we use often, but without putting much thought into just how long those spices have been sitting in the cupboard for, they could be years old without you even realising. While old spices won’t pose a health hazard, they won’t taste anywhere near as good as they should, which means your cooking will be lacking in flavour. When spices start to get old they begin to lose their flavour, but how do you know if spices have gone stale? It’s not worth keeping old spices, even if it feels as though you are being wasteful throwing them away. The purpose of adding spices to food is to add flavour to the end meal, so there is little point using spices that have lost their flavour and fragrance. You will end up with a dish that tastes much the same as it would have if you didn’t add the spices. Whole spices, including cinnamon sticks, peppercorns, cloves, cumin, cardamom and nutmeg will stay fresh for 5 years if they are kept in an airtight container. These are the types of spices you grind as you need them, and they offer the best value for money given they have a longer lifespan than the pre-ground varieties. Dried herbs can keep for 3 years in a dry, airtight container.  Ground spices on the other hand will last up to 4 years provided they have been stored properly. Don’t be tempted to keep herbs and spices in the freezer as a way to keep them fresh for longer. The condensation will spoil them quickly, no matter how quickly you remove them and return them to the freezer after every use. Even steam from the oven or stovetop can cause condensation to form in the container, so definitely don’t store your herbs and spices near the stove. Also, rather than shaking the container directly over your cooking to add spices, use a spoon. This will prevent steam entering the container.

The quickest way to test if herbs and spices are still fresh is to take small amount out of the packet or container and rub it in the palm of your hands, as the spice warms up you will be able to test its freshness. If the herb or spice still smells fragrant then it’s still good to use, however if it doesn’t smell like much it’s time to replace it.

Another way to tell if spices have gone stale is to take a look at the colour and texture of the spices. Vibrant colour generally means that the spices still taste good. Likewise, if the colour is bland then it’s likely the spices will taste bland also. Spices that started out green will usually turn yellow or brown as they go stale, and spices the began as a bright red will turn maroon as they age. Regularly organising your spice rack will help to make sure you always have still fresh herbs and spices ready to go at all times. All packets should have a best before date on them, but these can fade of plastic containers and glass jars easily. When you bring spices home, take a permanent texta and write either that date or the date you purchased the spices (no matter how long they will sit unopened) on the packaging. That way you can easily see at a glance just how old the spices are. Because herbs and spices don’t have an indefinite shelf life, there is not much point buying a gigantic bulk packet if there is no way you could possible use that much even over the next few years. Stick to packaging sizes that suit your usage patterns and cooking style. It might seem cheaper in unit pricing terms to buy the large pack, but it’s going to cost you more in the long run if you only use a quarter of the packet. So next time you are cleaning out your pantry do a spice check as well, that way you can be sure when ever you add them to a dish they will add the flavour they are suppose to. Don’t let food go to waste, store it in the freezer instead! While not everything can be frozen, there are so many grocery items you can freeze that will come out of the freezer just as good as the day they went in. Stock up on freezer bags and ice cube trays, keep an eye out for bargains that freeze well at the supermarket and start filling up that freezer!

1. Cheese Cheese freezes extremely well. Grate the cheese and place in a zip lock bag to freeze. Add a little cornflour and shake before freezing to stop the cheese clumping together, which will help if you will be taking only a little of the frozen cheese out of the bag at a time.

2. Grapes Not only do grapes freeze well due to their high water content, but frozen grapes also taste great. Buy grapes at their cheapest in summer and freeze ready for the winter months when grapes are harder to find. grapes

3. Rice To freeze rice, just cook as normal and let cool. Then portion into zip lock bags, flatten inside the bag and lay flat the freezer. This is great for those nights you need dinner in a hurry, and is perfect for brown rice which can ordinarily take a while to cook.

4. Pasta Next time you are making pasta, cook extra and freeze for another day. Just let cool and portion into freezer bags. Perfect for serving with a quick sauce or adding to soups.

6. Milk If you have more milk than you know what to do with, it can be frozen in the bottle it comes in. When you are ready to use the milk, just let it defrost then give it a good shake before using, as the milk will separate on thawing.

7. Tomato paste Don’t let that big jar of tomato paste go mouldy in the fridge. Freeze your leftover tomato paste in ice cube trays then put into a zip lock bag once frozen. Measure the tomato paste and put approximately 1 tablespoon into each ice cube compartment, and you can just grab as many as you need at a time from the freezer. tomato paste

8. Juice Fruit juice freezes extremely well due to its high water content. If you are freezing in the bottle be sure to take out a little before freezing to allow room for the juice to expand as it freezes.

9. Bread Do you find your family only uses half a loaf of bread before the rest starts to go stale? Freeze loaves of bread as soon as you get home from the supermarket and pull out individual slices and defrost as needed. Other bakery items such as bread rolls, loaf cakes, cookies and muffins also freeze well.

10. BBQ Those hot BBQ rotisserie chickens you get from the deli department of your local supermarket are great for freezing. Take all of the meat off the bone, then divide up into portions and freeze in freezer bags.

11. Lemon and lime juice If you only need half a lemon or lime and don’t know what to do with the other half, try freezing it. First squeeze out the juice, then pour into ice cube trays to freeze. Store in a zip lock bag once frozen for perfect juice portion sizes. The same can be done with oranges.

12. Fresh herbs Fresh herbs can be very expensive so you don’t want to waste any extras that you don’t need. Chop up the herbs and divide between ice cube trays, then cover with olive oil and freeze. To use, just add the frozen cubes as you are cooking and let them defrost. Perfect for soups and pasta sauces. fresh herbs

13. Bananas Don’t throw out your bananas just because they are turning a little black. Chop then up and freeze in zip lock bags to be used for cakes and smoothies. You can even freeze bananas in their skins, then pop in the microwave, chop off the top of the banana and squeeze the insides out of the skin.

14. Ginger If you don’t need a whole piece of ginger, pop the rest in the freezer. You can then grate as much ginger as you need while it is still frozen. Just peel the ginger before freezing so that it is to grate.

15. Yoghurt Yoghurt can be frozen and defrosted again to eat as is, or frozen in ice block mould as a frozen treat for the kids.

16. Nuts Nuts are cheaper bought in big bags rather than smaller packets, so buy in bulk and put whatever you won’t be eating right now into the freezer, which will keep the nuts nice and fresh. nuts

17. Stock Store you leftover chicken or beef stock in the freezer, either in a zip lock bag or ice cube trays, depending on the portion sizes you are most likely to use. 18. Onions Chop up onions in bulk and freeze in a zip lock bag. Then, just take out a handful of chopped onions as needed and cook as usual.

19. Eggs Just whisk the egg whites and yolks together and freeze in ice cube trays, transferring to a zip lock bag and freezing for up to 6 months. Approximately 3 tablespoons of frozen egg is the equivalent of 1 whole egg.

20. Peanut butter Peanut butter freezes well due to the high fat content. Freeze in ice cube trays and transfer to a clip lock bag once frozen. Other nut butters can also be frozen in this way.

21. Wine Do you have leftover wine after cooking? Since wine can be expensive and lose its flavour pretty quickly in the fridge, just freeze it for a later date. When you need it again, let it thaw out then freeze as usual. wine

22. Butter Butter freezes very well! Next time it is on sale, stock up and keep it in the freezer. Pull it out of the freezer when you need it, let it defrost and use as usual.
